Hygiene & Sustainability Manager

About the role

The Hygiene & Sustainability Manager is responsible for safeguarding guest health and driving environmental initiatives at Raffles Seychelles. Reporting to the Resort Manager, you will lead the Food Safety Management System (FSMS) and implement the brand’s sustainability agenda across the property.

Key responsibilities

• Design, implement and maintain the HACCP system and ensure compliance with ISO 22000.
• Conduct regular inspections of local and international suppliers to verify raw‑material safety.
• Oversee microbiological sampling of food, water and surfaces, interpret results and trigger corrective actions.
• Perform daily walkthroughs of kitchens, bars, receiving areas and waste‑management facilities to guarantee “like‑new” cleanliness.
• Serve as the primary liaison with Seychelles health authorities and internal stakeholders on hygiene matters.
• Lead the deployment of Accor & Raffles sustainability objectives, monitoring environmental and social performance.

Required profile

• Proven experience in food safety management within a luxury hospitality environment.
• Strong knowledge of HACCP, ISO 22000 and local health regulations.
• Demonstrated ability to drive sustainability projects and work with cross‑functional teams.
• Excellent analytical skills for interpreting microbiological data and implementing corrective measures.
